Fillet of orata in citrus sauce:
 
- 1 kgs of fillets of orata
- the juice of an orange and a lemon
- the peel grated of two oranges
- an onion, oil, walnut-tree moscata, salt and pepper

Grease a tray and arrange the fish fillets, skin side down.
Chop the onion finely and mix with the fruit juice and grated orange peel: pour this mixture over the fish and put into the fridge to marinate for at least half an hour
Place the fish fillets on a baking dish, season with salt, pepper and "noce moscata" and cook for about 15 minutes in a pre-heated oven at 180°.
